"Frico" cheese galette

A traditional dish from Friuli, frico is a rustic pancake made with cheese, potatoes, and onions, slowly cooked in a pan until it develops a golden crust and a soft, melting center. It falls somewhere between a pancake and an omelet, with a texture that can be soft or crispier depending on how long it's cooked. Served piping hot, it pairs well with a simple salad or polenta.

Vigna Vecchia, Barbera d'Asti Superiore from old Cossetti vines, has an intense red color with garnet highlights, luscious aromas of ripe red fruits (Morello cherries, plums), peppery spices, and a balanced, lingering finish.
